after betting and winning on both sides--all I get as a payout is my original bets awarded, this has happened almost every time I win both bets!

  Check your bonus wager.  If you're making a bonus wager equal to the main wager, you must win both hands in order to break even unless the bonus is also a winner.  To win Coins with just the main wager, reduce you bonus wager to 0, otherwise that extra bet will be removed from your total winnings most hands.

  The bonus wager will pay out if you get a straight or better, but as that doesn't happen every hand, those are the hands where the results are as you describe.
